WAGYU GOTS
Our story

From a 1962 butcher shop to the slopes of Kiyomizu-dera

It all began with a single butcher shop, founded in 1962.

"Someday, we will raise the world's best Wagyu with our own hands."

  1. 1962A butcher shop

For more than 60 years our family has worked with meat every day. Along the way, one big dream took shape.

  2. MiyazakiRaising our own Wagyu

Instead of only buying finished brand beef, we started from the cattle themselves, in Miyazaki.

  3. GOTSInheriting a chef's craft

World-class beef deserves world-class cooking. That led us to the original GOTS, a restaurant listed in the MICHELIN Guide for six consecutive years*. We took over its name and the techniques its chefs had refined.

  4. TodayTaking GOTS to the world

We took over GOTS with a promise: the name will not end in Japan. We will grow it into a brand loved around the world.

What we look for, beyond grade and marbling

Umamiof the lean meat
Sweetnessof the fat
Aromaas it cooks
Melton the tongue

A butcher's spirit since 1962. Wagyu raised in Miyazaki. The craft we inherited with the GOTS name. Now a new challenge begins, here on Gojozaka.

* Refers to the original GOTS restaurant before it was taken over. This Gojozaka restaurant is a new location and is not itself listed in the MICHELIN Guide.
